How to Make Avocado Chicken Salad?

Making a healthy and delicious avocado chicken salad



Ingredients

2 large cooked chicken breasts, shredded or chopped

2 large avocados, peeled, pitted, and diced

1 cup cooked corn, fresh or frozen and thawed

¼ cup finely chopped red onion (or green onion or chives)

¼ cup chopped fresh cilantro (or parsley)

2 tablespoons extra virgin olive oil

2 tablespoons lime juice (freshly squeezed is best)

½ teaspoon salt

¼ teaspoon black pepper



Instructions

Prepare the chicken: If not already cooked, you can bake, grill, pan-fry, or use leftover or rotisserie chicken. Shred or chop it into bite-sized pieces.

Dice the avocado: Carefully peel, pit, and dice the avocados into bite-sized pieces.

Combine ingredients: In a large bowl, add the cooked chicken, diced avocados, corn kernels, red onion, and cilantro.

Make the dressing: In a separate small bowl, whisk together the olive oil, lime juice, salt, and pepper.

Dress the salad: Pour the dressing over the chicken mixture and gently stir to combine. Be careful not to mash the avocados too much.

Season and serve: Taste the salad and adjust the seasonings (salt, pepper, or lime juice) as needed. Serve chilled and enjoy!


Tips and variations

Prep Ahead: Chop all ingredients except the avocado and store them separately. Mix the avocado in right before serving to minimize browning.

Prevent Browning: A layer of plastic wrap pressed directly on the surface of the salad in an airtight container can help slow the browning of the avocado when refrigerating leftovers.

Extra Creaminess: You can mash some of the avocado with the dressing ingredients for a creamier consistency.

Additions: Consider adding other elements like diced tomatoes, cucumber, hard-boiled eggs, or even a squeeze of honey or a sprinkle of cayenne pepper for a touch of sweetness or heat.

Serving Suggestions: This salad is versatile and can be served as a side, on its own as a light meal, as a dip with crackers or chips, in a wrap or sandwich, or even on top of lettuce for a salad base.
