Ingredients:

  • 500 grams of fish (any firm fish like cod, tilapia, or salmon)
  • 2 tablespoons of vegetable oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1-inch piece of ginger, grated
  • 1 teaspoon of ground turmeric
  • 1 teaspoon of ground cumin
  • 1 teaspoon of ground coriander
  • 1 teaspoon of red chili powder (or to taste)
  • 1 cup of chopped tomatoes
  • 1 cup of water
  • Salt to taste
  • 2 tablespoons of chopped fresh cilantro (coriander) leaves

Instructions:

  1. Clean and cut the fish into bite-sized pieces, sprinkle some salt over them and set aside.
  2. Heat the oil in a large pan or pot over medium heat.
  3. Add the chopped onions and sauté until they turn translucent.
  4. Add the minced garlic and grated ginger and sauté for another minute or until fragrant.
  5. Add the ground turmeric, cumin, coriander, and red chili powder and mix well.
  6. Add the chopped tomatoes and cook until they soften and turn mushy.
  7. Add 1 cup of water and bring the mixture to a boil.
  8. Gently add the fish pieces and let them simmer for 5-7 minutes or until cooked through.
  9. Add salt to taste and garnish with chopped cilantro leaves.
  10. Serve hot with steamed rice or bread.
