How To Make Desi Gujarati Khichdi
Khichdi is a popular dish in Indian cuisine, made with rice and lentils or split mung beans. It is a simple and nutritious dish that is easy to make. Here's a recipe for basic Khichdi:
Ingredients:
- 1 cup basmati rice
- 1 cup split mung beans (or any other lentil)
- 3 cups water
- 1 teaspoon cumin seeds
- 1 teaspoon mustard seeds
- 1 teaspoon turmeric powder
- 2 tablespoons ghee (clarified butter) or oil
- Salt to taste
- Optional: chopped vegetables like carrots, peas, and potatoes
Instructions:
- Rinse the rice and lentils thoroughly and soak them in water for 30 minutes.
- Heat ghee or oil in a pressure cooker or a pot.
- Add cumin and mustard seeds and let them splutter.
- Add the soaked rice and lentils, turmeric powder, salt, and 3 cups of water (or enough to cover the rice and lentils).
- Stir well and add chopped vegetables if using.
- Close the pressure cooker or pot and cook on medium heat until you hear 2 whistles in the pressure cooker (or cook for 15-20 minutes in a pot).
- Turn off the heat and let the pressure release naturally.
- Open the cooker or pot and mix the Khichdi well.
- Serve hot with yogurt, pickle, or any side dish of your choice.
