How to Make Veg Biryani | Vegetable Biryani
Ingredients:
- 2 cups basmati rice
- 3 tablespoons ghee or vegetable oil
- 1 large onion, thinly sliced
- 1 tablespoon ginger-garlic paste
- 1 green chili, finely chopped
- 1/2 cup mixed vegetables (carrots, peas, beans, etc.)
- 1/2 cup diced potatoes
- 1/2 cup diced tomatoes
- 1/4 cup yogurt
- 1/4 cup mint leaves, chopped
- 1/4 cup coriander leaves, chopped
- 1 teaspoon cumin seeds
- 1 teaspoon coriander powder
- 1 teaspoon garam masala powder
- 1/2 teaspoon turmeric powder
- Salt, to taste
- 3 cups water
Instructions:
Rinse the rice thoroughly until the water runs clear. Soak the rice in water for 30 minutes.
In a large pot or Dutch oven, heat the ghee or vegetable oil over medium heat. Add the sliced onion and sauté until golden brown.
Add the ginger-garlic paste and chopped green chili. Sauté for a minute.
Add the mixed vegetables, potatoes, and tomatoes. Sauté for 5-7 minutes.
Add the yogurt, chopped mint leaves, chopped coriander leaves, cumin seeds, coriander powder, garam masala powder, turmeric powder, and salt. Mix well.
Drain the soaked rice and add it to the pot. Mix well.
Add water and stir gently. Bring it to a boil.
Reduce the heat to low, cover the pot with a tight-fitting lid, and simmer for 15-20 minutes or until the rice is cooked and the water is absorbed.
Remove from heat and let it sit for 5-10 minutes.
Fluff the rice with a fork and serve hot with raita or any side dish of your choice.
